Ingredients
Dough
- 7 cups all-purpose flour
- 2 tablespoons instant yeast
- ½ cup granulated sugar
- 2 teaspoons fine salt
- 2½ cups whole milk
- ½ cup unsalted butter
- 2 large eggs
- 1 pound sharp cheddar, diced into bite-sized cubes
Garlic Butter Finish
- ¼ cup melted unsalted butter
- 1 garlic clove, finely grated
- ¼ cup freshly grated Parmesan cheese
- 1 tablespoon finely chopped fresh parsley
Directions
1. Prepare the Base
Combine 4 cups of flour, the instant yeast, sugar, and salt in a large mixing bowl until everything is evenly distributed.
2. Warm the Liquid Ingredients
Gently heat the butter and milk together until the butter melts completely. The mixture should be warm to the touch, around 110°F (43°C), but never hot.
3. Form the Dough
Gradually add the warm milk mixture to the dry ingredients, stirring continuously until combined. Add the eggs and continue kneading until the dough begins to develop elasticity.
4. Incorporate the Remaining Flour
Continue adding the flour gradually until the dough is soft, elastic, and slightly tacky. It should feel smooth, flexible, and only slightly sticky.
5. Allow the Dough to Rise
Place the dough in a lightly oiled bowl, cover it, and allow it to rise in a warm spot until it has doubled in size, about 1 hour.
6. Add the Cheese Filling
Divide the dough into 32 equal portions. Flatten each piece into a small disk, place one cube of cheddar in the center, then carefully seal the dough around the cheese to form a smooth ball.
7. Second Rise
Arrange the rolls on parchment-lined baking trays, leaving enough room for expansion. Cover the rolls lightly and allow them to proof for an additional 30 minutes.
8. Prepare the Garlic Butter
Combine the warm melted butter and freshly grated garlic in a small bowl. In a separate bowl, combine the Parmesan cheese and chopped parsley.
9. Bake
Bake in a preheated 350°F (175°C) oven for 18–20 minutes, or until the tops are beautifully golden.
As soon as the rolls come out of the oven, brush them generously with the garlic butter and finish with the Parmesan-parsley mixture while still warm.
